With a Cantonese chef poached from one of Xi’an’s top restaurants, this is where the locals go for a treat. The niu is akin to roast beef on sesame toast. Jiangnan qianjiang ru, lightly battered chicken in sweet-and-sour sauce, complements the Cantonese favorite, xiqing baih chao xian yu (fresh squid on a bed of celery, field mushrooms, and lotus).
